Rice Chopsuey
Rice ChopsueyIngredients:
Boiled Noodles ½ packetBoiled Rice 250 grams
Cabbage Slice Half
Green Beans Slice 150 grams
Finely Chopped Onion 2
Carrots Slice 1
Finely Chopped Ginger Garlic 1 tbsp
Chicken Cube 1-2
Crushed Black Pepper 1 tsp
Soya Sauce 1 tbsp
Spring Onions 3-4 Sticks
Sesame Seeds Oil ½ tsp
Oil 3-4 tbsp
Salt to taste
Method:
First take ½ packet of noodles and boil the noodles then fry. Then take a pan add 3-4 tbsp of oil 1 tbsp of finely chopped ginger garlic, 2 finely chopped onion and fry it for 1 to 2 minute.Then add 150 grams of green beans slices,1 carrot slices and 3-4 strands of spring onion and cook in 5 to 7 minutes on high flame. Then add 1-2 chicken cube , 1 tsp of crushed blacke pepper, salt to taste , 1 tbsp of soya sauce and as required water and mix it well. Now add ½ tsp of sesame seeds oil and half cabbage mix it well. Then add boiled rice and mix it well. At last put fry noodles in a platter and pour the rice chosuey mixture on top and serve it.
Panzanella

Panzanella Ingredients

Mustard Paste 1 tsp

Method
For Salad: Take a mixing bowl add 2 chopped tomatoes, 1 chopped onion, 1 chopped cucumber, 1 chopped capsicum, 1/3 tsp of basil , 3-4 bread slices cut it into square piece , fry the bread slices and mix it to the salad. For Dressing: Another mixing bowl add 3-4 chopped garlic cloves 1 tsp of mustard paste , ½ tsp of crushed black pepper , 1 tsp of olive oil and a pinch of salt ,mix it well. For Steak: Take a mixing bowl add 1 tsp of garlic paste , 1 tsp of crushed black pepper , 2tbsp of dark soya sauce , 2tbsp of white vinegar and a pinch of salt ,mix it well marinate the beef steak . Now take a grill pan add a little oil on it heat the Cham the steak , fry the steak on the both of the sides , cook when the beef meat is tender and grill marks appear on it. Method
Take a blender add 1 cup of coconut cream, ½ liter vanilla ice cream , 250ml pineapple juice, few drops of banana essence and as required ice cubes. Blend all the ingredients. Now pour the drink on serving glasses and garnish with mint leaves and serve it

Method
Take a sauce pan add 2 kg of milk, boil the milk when the milk is bubble up leave for few minutes, now add ½ cup of white vinegar now strain the milk on cloth , hang the cloth till its dry, now separate the paner add 1 tsp of baking powder , 2-3 tbsp of all purpose flour now mix it well with help of hands. Now shape it to the ovals. Now take a sauce pan add 1 cup of sugar, as required water, few drops of screw pine essence mix it well and cook to make a sugar syrup. Now add the cham cham ovals in the sugar syrup , cook and leave it to the low flame. Now the cham cham comes up . dish out the cham cham . At last ½ cup chopped almonds and pistachio and serve it hot

Ingredients
Mutton Meat ½ kgOnion 1
Garlic 4-5 cloves
Turmeric Powder ½ tsp
Coriander Powder ½ tsp
Fennel Seeds ¼ tsp
Poppy Seeds 1 tbsp
Cumin Seeds ½ tsp
Lemon juice 2 tbsp
Cashew Nuts ½ cup
Coconut ½ cup
Green chilies 5-6
Coriander 1 bunch
Mint leaves 1 bunch
Oil 1/3 cup
Salt as per taste
Method
For Mutton Marination: Take a mixing bowl add ½ kg of mutton meat add 2tbsp of lemon juice, ½ tsp turmeric powder and a pinch of salt mix it well, marinate it atleast 1/2 an hour. For Coconut Paste: Take a blender add ½ cup of decicated coconut, 5-6 green chilies, 1 onion , 1 tbsp of poppy seeds , 4-5 garlic cloves, ½ cup of cashew nuts ¼ tsp of fennel seeds , ½ tsp of coriander powder. Blend it to make a paste For Green Paste: take a blender add 1 bunch of coriander , 1 bunch of mint leaves and as required water blend it to make paste. Now take a cooking pan add 1/3 cup of oil , heat the oil add ½ tsp of cumin seeds fry now add onion and fry till the onion is light brown add marinate mutton mix it well and fry now add coconut paste and as required water, cook until mutton is tender , when the mutton meat is nicely tender add green paste mix it well and roast it. Now dish it out and garnish with cashew nuts and serve it

Talhar chili 50 gram
Black cumin seeds 4tbsp
White cumin seeds 2tbsp

Method
Take a fry pan add 50 grams of talhar chili, 4 tbsp of black cumin seeds, 2 tbsp of white cumin seeds, 1 tbsp mace , 6 tbsp of coriander seeds 2 tbsp of whole black pepper and 2 staranise 1 tbsp cloves and 1 tbsp of cardamoms toast it on the fry pan and blend all the ingredients . Now the kunna masala is ready (the quantity of this masala is 3-4 kg .

Method
For Kunna : Take a cooking pan add water and 2 goat feet make a stock and set aside. Take a clay pot add 1 cup of clarified butter, heat the clarified butter add 2 sliced onions cook till its light brown now add 2 tbsp of ginger garlic paste , add ½ kg mutton meat, fry all the ingredients. Now add 1tbsp of gulzar’s special kunna masala, 2tbsp of red chili powder , 1 tsp of turmeric powder cook 2-3 minutes. Now add mutton stock with bones, cook on a low flame. When the mutton is tender add as per taste salt mix it well. Now take 2 tbsp of roasted flour dissolve into some water mix it well, add the mixture slowly slowly into the clay pot , make a gravy, when the gravy is thick. Dish out the paya sprinkle the black cumin seeds and garnish with ginger Julian’s and serve it.CARAMEL PARTY MOUSSE

CARAMEL PARTY MOUSSE
INGREDIENTS:
Unflavored Gelatin 1 tbsp
Water ½ cupSugar ½ cup
Eggs 5
Beaten Cream 2 cup
Brown Sugar 2 tbsp
METHOD:
Heat water in a pan. Now put another pan in it and add ½ cup water and 1 tbsp unflavored gelatin and cook until the gelatin is done properly and then cool it. Then in a pan add ½ cup sugar and 2 tbsp water and boil it until the syrup becomes like golden caramel. Now take it out from the stove and cool it for 5 minutes and add the remaining water until the mixture becomes thick. Then cook it for 5 more minutes and add the gelatin mixture. Add 2 egg yolks and 2 tbsp brown sugar and beat it until it becomes thick and creamy. Then beat the caramel mixture that it becomes fluffy. Beat egg white. METHOD:
Chop the lettuce, onion, cucumber, tomatoes and green chilies and place them in a large bowl .Add yogurt to it and mix well then add all the spices like, black salt, salt, black pepper, chaat masala, and red chili powder, salt. Mix well, and finally add fresh cilantro
SWEET AND SOUR RICE WITH CHICKEN

Tomato Ketchup ½ cup
Tomato Puree ½ cup
Black Pepper 1 tsp

Vinegar 1 tbsp
Garlic 1 tbsp
Honey 2 tbsp
Soya Sauce 2 tbsp
Sesame Oil 2 tbsp
METHOD:
Heat 50g butter and add 1 tbsp garlic and fry it. Now add ½ kg chicken after making small pieces of chicken and cook it on high heat. Then add 2 long cut carrots and 6 fresh red chilies. Put 2 cup water, ½ cup tomato ketchup, ½ cup tomato puree, 2 tbsp honey, 2 tbsp soya sauce, 2 tbsp sesame oil, 1 tsp salt and 1 tsp black pepper and cook on low heat for 10 minutes, until the chicken is done.Soak 2 cup rice and add chicken in it and cook. When water gets evaporated, then add 4 green onions and put it on simmer. Serve sweet and sour rice with chicken.

METHOD:
Grease a deep pan and add 4 cup French bread cubes and spread it. Pour 100g melted butter. Beat 3 eggs in a medium sized bowl and add 2 cup milk, ½ cup sugar, 1 tsp vanilla extract, ½ tsp cinnamon powder and 1 pinch salt. Stir 6 banana slices. Now take this mixture and spread it on bread cubes and bake it for 40 minutes on 375C. For the sauce, melt 3 tbsp butter and add 2 tbsp sugar and 1 tbsp starch. Stir ¾ cup milk and ¼ cup light corn syrup and cook it on medium heat until the mixture gets boiled. Boil it for 1 minute and take it out from the stove and stir it in vanilla extract. Serve the hot sauce with hot pudding.

METHOD:
Heat oil and add ginger garlic paste in it. When aroma comes, then add the chicken in it. With it add, chopped tomatoes, red chili powder, turmeric powder, all spice powder and salt and cover it. When chicken is done, then add boiled split gram and milk and cover it for 10 minutes. In the end, add green chilies and mint leaves. Sabut Masoor is ready.

Sift all the dry ingredients together, beat oil, sugar, eggs and essence, add in the dry ingredients and finely in all the dry ingredients, pour the batter into well greased 9 inches round pan, bake in a preheated oven for 45 to 50 minutes on 180 degrees, remove, chill and frost. Method for icingScald cream, add ovaltine, pour over chocolate, mix to make genache, once it has cooled down, beat on low speed, gradually adding in the whipped cream, also mix in the icing sugar.

Cook all the above ingredients of sauce together until the half quantity remainsStrain and the simmer for a few minutes and then thicken with corn flour paste.Teriyaki sauce is ready.In another pan take ¼ cup cooking oil and stir fry the marinated beef for about 10 minutes.When tender add the sauce to it. Mix well and serve. Garnish with spring onions.
